You Will Need
1 Pound Strawberries
1/4 cup sugar
1 ts Lemon Juice
1/2 TS Vanilla Extract
1 Package Cream Cheese
1 TS Corn Starch
1 TS Water
1/2 TB Cinnamon
3 TB Sugar
1 ts Lemon Extract
1/2 Cup Cream
Start by cutting strawberries, I cut mine in 1-inch rounds and then in half. Add 1/4 cup sugar and lemon juice and mix well. (let set covered for 1 hour, stirring occasionally) Place mixture into your Instant Pot, put on the lid, and set to sealing (not venting)
Press your steam button (or rice cook button) and set it for 10 min. When done, instant release. Next, add 1/2 TS Vanilla, 1 package cream cheese, and mix well.
In another bowl mix 1 TB corn starch with 1 TB water, then in another bowl, mix 1/2 TS Cinnamon with 3 TB sugar (mix well) You will have some left over to top topping with. Add 1 TB cinnamon & Sugar mixture, along with corn starch mixture to your instant pot and stir well. Then add 1 ts lemon Extract and 1/2 cup cream..Stir until all is blended well and thickened.
